Oven Baked Blackberry BBQ Chicken
Ingredients:
Chicken:
8-10 Chicken Thighs
1 Tbs Onion Powder
1/2 Tbs Garlic Powder
1 Tbs Cajun Seasoning
1 Sazon Packet (Optional)
Sauce:
4-5 cups Blackberries
1/2 Cup Brown Swerve (Adjust to liking)
1/2 Cup Sugar Free Ketchup
1/4 Cup Imitation Honey (Optional)
2 Tbs Apple Cider Vinegar
1 Tsp Cinnamon
1 Tsp Canyenne
Salt to Taste
*You can also use a sugar free bbq as your base and eliminate ketchup and apple cider vinegar
Instructions:
Preheat oven to 400F
After cleaning your chicken…yes CLEAN YOUR CHICKEN…toss in all the above seasonings and rub evenly. Once fininshed sit in the refrigerator for 30 minutes. If time doesn't allow, don’t trip, your chicken will still be on point, but allowing it to rest in the fridge for a bit will allow those seasons to seep into the chicken.
Place chicken in the oven covered for 20-25 minutes. Remove from the oven and drain liquid from the pan. Apply sauce to the chicken and cook uncovered for an additional 20 minutes . Apply another layer of sauce on the chicken and broil on high for 2-3 minutes.
Sauce
On medium heat add blackberries and 1 cup of water to a sauce pan and cook down for 6-8 minutes or until berries are breaking down. You’ll know its ready when the berries are stripped of their original color and begin to turn red.
Gently mash the berries inside of the pan and continue to cook for 1-2 minutes. Once sauce has cooled press blackberries through mesh strainer and bring back to simmer on medium heat. Stir in the remaining ingredients and allow sauce to continue cooking until it reaches your desired thickness. Set aside and allow it to cool.
Serve with a side of garlic green beans and my dirty cauliflower rice.
