Philly Risotto
Ingredients:
1-2 Ribeye Steaks
1 Green Onion (Chopped)
1/2 Yellow Onion (Chopped)
3 Cups Riced Cauliflower
1/2 Cup of Baby Bella Mushrooms (Chopped)
1/2 Tbs Minced Garlic
1 Cup Heavy Cream
1/4 Cup Shredded Pepper Jack Cheese (Optional)
2 Tbs Garlic Herb Butter
1 Tbs Herbs de Provence or Italian Seasoning
1 Tbs Crushed Beef Bouillon
1 Tbs Onion Powder
1 Tbs Garlic Pepper
1 Tbs Cajun Seasoning (Salt Free in Possible, if not, it is what it is)
4 Slices of Provolone Cheese
Salt and Pepper to Taste
Olive Oil
Olive Oil Spray
Instructions:
Philly Risotto
Once you’ve rinsed off your ribeyes, yes CLEAN YOUR MEAT, pat them dry and apply generous amounts of salt and pepper to each side. Don’t trip about how much you’re using because you’re going to lose a decent amount to the pan your cooking in, but in order to form that beloved crust that we all love, the steak has to be well seasoned. Set aside
On medium high heat, spray your non stick skillet with a smidget of olive oil spray, and toss in all of your CHOPPED vegetables. After 3-4 minutes and the veggies begin to wilt add your cauliflower, 1/2 tbs onion powder, 1/2 tbs garlic pepper, 1/2 Tbs cajun seasoning and continue to toss for an additional 2-3 minutes.
Lower Heat to medium and add 1/2 heavy cream, Herbs de Provence, beef bouillon to the mix and stir occasionally for 4-5 minutes or until most of heavy cream has been absorbed. Hit it with the pepper jack cheese, give it a few stirs and admire your work. Yea it should be smelling real good in here right about now, but we’re not finished. Set Aside
Provolone Cream Sauce
On medium high heat pour your remaining heavy cream into a sauce pan, add remaining seasoning and allow everything to come to a slight boil then return to low. Add provolone and stir often. Continue to cook on low for 4-5 or until desired thickness is achieved.
Ribeye
Preheat Oven to 425*
On high heat add butter and a hint of Olive oil to your pan and cook steak on each side for 3 minutes without fidgeting with it, just let it do its thing. Put steak in the oven for an additional 5 minutes or until desired temperature is reached. Remove and allow the steak to rest. Plate as shown above and Enjoy
