Keto French Toast w/ Caramelized Pecans & Strawberries
Strawberry Syrup:
Cut 2-3 Strawberries and coat in 1 Tbsp of Monkfruit Sweeetner. Put it aside, the sweetener will pull out the natural juices of the strawberries.
Caramelized Pecans:
Melt 1 Tbsp of butter on medium low heat, add a handful of pecan halves, 1 Tbsp of Brown Swerve and 1 Tsp of Cinnamon. Stir frequently until pecans have caramelized.
Keto Bread:
2 Tbs Melted butter
1/4 Tsp Vanilla extract
1/2 Tbsp Monkfruit sweetener or sweetener of choice
2 Tbsp Heavy Cream
1 Large egg
2 Tbsp Coconut flour
1 Tsp Crushed pecans
1/4 Tsp Cinnamon
½ Tsp Baking powder
1.Mix all ingredients in a Microwave safe container (Rubbermaid container works fine)
2. Microwave for 90 secs and the bread is done.
Coating:
1 Egg
1/4 Tsp Cinnamon
1 Tbsp of Heavy cream
1. Soak both sides of bread in coating.
2. In a nonstick olive oil sprayed pan cook bread 2 min on each side (med heat). Top with caramelized pecans,strawberry syrup, and sugar free whipping cream.
