Bacon Wrapped x Coffee Rubbed Filet Mignon
Ingredients:
(2) Filet Mignons (8oz) or desired cut
3 Tbs Herb Garlic Butter
3 Tbs Ground Coffee
1/2 Tbs Brown Swerve
2 Tsp Garlic Powder
2 Tsp Ancho Pepper
2 Tsp Smoked Paprika
1 Tsp Ginger Powder
1 Tsp Oregano
1 Rosemary Stalk
Salt and Pepper to Taste
Instructions:
Preheat oven to 400F
Mix all dry ingredients together until well incorporated.
Generously season steak on each side. Wrap steak in bacon and use a toothpick to assure it remains in place.
On high heat, melt butter and toss the stalk of rosemary into a cast iron skillet, then sear all sides of the steak for 2-3 minutes.
Transfer the skillet to the oven and cook steak until medium (160F) or to the temperature of your liking. Remove the steaks from the skillet and set aside. Allow them to rest 5 minutes before serving. Serve with cauliflower mash and lemon pepper broccolini. Enjoy
