Ginger Pepper Salmon w/ Crab Fried Cauliflower Rice
Ingredients
4 fillets of Salmon
1/3 Cup Low Sodium Soy Sauce or Liquid Aminos
3 Tbs Brown Swerve (Adjust to liking)
3 Tbs Ginger Paste or Ground Ginger
1 Tbs Cracked Black Pepper
1 Tbs Cajun Seasoning
1/2 Tbs Garlic Powder
1/2 Tbs Red Pepper Flakes
1/2 Tbs Parsley Salt to taste
Instructions
1. Combine cajun seasoning, black pepper, and salt in a bowl. Season both sides of salmon then set aside.
2. In a separate bowl combine remaining ingredients. For best results store in the refrigerator and marinate salmon for 30 minutes to an hour in a zip lock bag.
3. Place salmon along with sauce in a baking pan. Broil on 2nd to highest rack (6 inches from top) for 15 minutes and remove. Salmon should be cooked through and a nice crust should have formed. Top with sauce, garnish with parsley and serve.
Crab Fried Rice
1 Head of Cauliflower Riced (Frozen works as well)
10 oz Lump Crab meat or whatever your budget allows
3 Springs of Green Onion
1/2 Yellow Onion (Chopped)
1/4 Cup Low Sodium Soy sauce Or Liquid Aminos
1 Tbs Minced Garlic
1 Tbs Sesame Oil
1 Tbs Old Bay Seasoning
1/2 Tbs Granulated Chicken Bouillion
1/2 Tbs Onion Powder
1/2 Tbs Garlic Powder
Parsley
Salt and Pepper to taste
Olive oil
1. Heat olive oil on medium heat. Add yellow onions, green onions, and garlic. Stir occasionally for 5-8 minutes or until vegetables turn translucent.
2. Add Cauliflower Rice, remaining ingredients (except crab), and adjust temp to medium high. Stir frequently for 5 minutes and return heat to medium.
3. Add crab meat and toss lightly. Allow it to cook for an additional 5 minutes. Top crab fried rice with a little ginger pepper sauce, place salmon fillet on top of rice, and garnish with parsley. Enjoy
**This recipe calls for lower sodium soy sauce in order to control salt in the dish.**
