Black n Blue Cheesecake Bites

Ingredients:

8 oz Cream Cheese (Softened)

1 Cup Swerve Confectioner Sweetener

1 Cup Almond Flour

1/4 Cup Sour Cream (Softened)

1/4 Cup Blackberries

1/4 Cup Blueberries

1/4 Cup Butter (Melted)

1/4 Cup Brown Swerve

1 Tsp Vanilla Extract

1 Tsp Lemon Juice

1 Egg

Instructions:

Black n Blue Sauce:

On Medium heat add blue berries, blackberries, and 1/4 cup of confectioners sugar. Stir frequently, when mixtures starts to bubble reduce heat and simmer for 12 Minutes and allow to cool. Strain seeds and set aside.

1. Preheat oven to 350

2. In a Large bowl mix Almond Flour, Brown Swerve and butter. Add 1 Tbs of mixture in greased muffin pans or liners and press down to form crust layer.

3. Combine Cream Cheese, Vanilla, Sour Cream, Egg, lemon juice, and remaining sweetener. Mix well and add pour on top of each crust layer.

4. In small amounts top each cheesecake with black and blue sauce. Use toothpicks to create swirls on top and place in oven for 15-20 minutes. Allow cheesecake to cool for 15 minutes before storing in fridge for 3-4 hours or overnight. Enjoy
