Chicken Jambalaya

Ingredients:

4 Cups Riced Cauliflower (Frozen works)

4-5 Chicken Fillets

2 Roma Tomatoes (Chopped)

1 Green Bell Pepper (Chopped)

1 Red Bell Pepper (Chopped)

1 Celery Stalk (Chopped)

1/2 Yellow Onion (Chopped)

1/4 Cup White Cooking Wine

2 Tbs Cajun Seasoning

1 Tbs Granulated Chicken Bouillon

1 Tbs Minced Garlic

1/2 Tbs Garlic Powder

1/2 Tbs Onion Powder

1/2 Tbs Parsley

1/2 Tbsp Italian Seasoning

1 Tsp Cayenne Pepper

Olive Oil

 Instructions:

1. Season chicken with Cajun seasoning to liking, pan fry in skillet. Once cooked through chop into square pieces and set aside.

2. In the same skillet on medium heat add olive oil. Once oil is hot toss in peppers, onions, celery, garlic, parsley, and Italian seasoning. Cook for 5-6 minutes or until translucent.

3. Stir in white wine and cook for 3-5 minutes before adding chicken bouillon, chicken and cauliflower rice. Cook uncovered for 5 minutes.

4. Add Cajun seasoning, onion powder, garlic powder, cayenne pepper, and tomatoes. Cook uncovered for an additional 10 minutes stirring frequently.

Remove from heat and garnish with fresh parsley. Enjoy
