Pineapple Fried Rice
Pineapple Fried Rice
3-4 Cups Cold Basmati Rice or preferred rice
1 Cup Pineapple (Chopped)
½ Cup Soy Sauce
¼ Cup Onion (Diced)
2-3 Tbs Garlic Herb Butter
1Tbs Onion Powder
1 Tbs Garlic Powder
1/2 Tbs Granulated Chicken Bouillon
½ Tbs Minced Garlic
½ Tbs Cajun Seasoning (Optional)
1-2 Tsp Sweetener
1 Tsp Ginger Powder
1 Tsp Sesame Oil
3 Eggs (Beaten)
Salt and White Pepper to Taste
Green Onion (Chopped)
Olive Oil
Instructions:
1. In a large skillet on medium heat, add butter and sesame oil. Toss in onions and garlic and sauté for 3-5 minutes or until the vegetables have softened.
2. Add rice, onion powder, garlic powder, ginger powder, sweetener, chicken bouillon, and Cajun seasoning. Stir until all ingredients are well incorporated.
3. Scoot your rice to the side and add a small dollop of oil to the skillet. Yea you heard me right, a small dollop. Scramble your egg and mix it well into the rice. Add Soy sauce and white pepper
4. Throw in your pineapple and continue mixing into the rice for 1-2 minutes. Chop up your green onions and toss it in the rice.
Serve with your favorite protein and vegetables. My recommendation is you cook some lemon pepper broccolini along with my mango shrimp.
