Grilled Pizza Stuffed Burritos

Here’s a simple snack idea that the entire family can appreciate. The ingredients below are how I prefer my burritos, but be sure to mix and match your favorite ingredients to your liking. There’s truly no wrong way to make these grilled burritos. Enjoy

Ingredients:

4-5 Low Carb Tortillas

8 oz Hot Ground Italian Sausage

Sliced Pepperoni

1 Cup Shredded Parmesan & Mozzarella Cheese Mix

1/2 Cup Simply Ragu Roasted Garlic Sauce (Sugar Free)

1/4 Cup Green Bell Peppers (Chopped)

1/4 Cup Yellow Onions (Chopped)

1/4 Cup Mushrooms (Chopped)

1/4 Cup Fresh Basil (Minced)

1-2 Tbs Herbs De Provence or Italian Seasoning

1/2 Tbs Red Pepper Flakes (Optional)

Salt and Pepper to taste

Sugar Free Sweetener of Choice to taste

Grated Parmesan

Olive Oil Spray

Instructions:

  1. Spray a non stick pan with Olive oil spray and place on medium heat. Once the pan is hot add the Italian sausage and cook for 6-8 minutes or until cooked through, remove from the pan and place to the side.

  2. Add all chopped vegetables to the pan and season with salt and pepper. Sautee veggies on medium for 4-5 minutes and set aside.

  3. For the sauce, combine Roasted Garlic Sauce, Herbs De Provence, sweetener, red pepper flakes, and Basil. I chose to heat mine up on the stove for a few minutes after combining ingredients, but it isn’t a required step.

  4. Add desired amount of pepperoni and Italian sausage, Tbs of sauteed veggies, and Tbs of cheese mix.

  5. Once you have your burritos rolled set aside. On medium heat, spray your pan with Olive oil and add burritos to the pan. Cook covered for 2 minutes on each side and remove. Your cheese should have melted perfectly and the burritos should have a nice crisp to them. Place your sauce in a dipping bowl and cut your burritos in half. Garnish with grated Parmesan cheese and Enjoy!
